Meet our Head Chef
Steve Gleeson is a Central Coast local who believes food is a universal language that can build relationships, share ideas and have fun. Steve brings 27 years of experience to the Indigo- Eats, Treats & Bar team and enjoys delivering great experiences as it is both exciting and challenging at the same time. We can’t wait for you to experience his creativity and innovation at Indigo – Eats, Treats and Bar with our seasonal menu and daily specials on offer.
The love of cooking
Steve’s love of cooking began at an early age, 3- 4 years of age, but at that time, like every other child, he had dreams of being a sports person – no particular sport – just all sports. Who didn’t want to be a great sportsperson as a kid?
I’ll cook for everybody!
When we asked Steve who he would love to cook for he simply said: “I will cook for everyone – I just love cooking!”. His favourite celebrity Chef is Marcus Wareing – he loves to keep it simple and delicious – oh..and holds 2 Michelin Stars. If he could invite any four guests to a dinner party he sensibly chooses his wife Karen, Dwayne Johnson (thank you says Karen), Hayden Christensen, P!NK (great entertainment) and Jeri Lynn Ryan (Star Trek stay tuned). When it comes to essential cookbooks for home Steve is all about Google or new books with Gluten Free or Dairy Free alternatives.
Steve would love to have the skill to be a great singer but sadly for the Indigo team he doesn’t. He has however cooked for some amazing singers; Neil Diamond, Dolly Parton, Bruce Springsteen and Aussie favourites Jimmy Barnes and Thirsty Merc. He also cooked for some sporting greats; the Wallabies, NSW Blues, NRL teams and more.
His guilty food pleasure is Caramel Slice and he loves nothing more than cheese and tomato on toast as his comfort food. Favourite dessert – baked cheesecake all the way. What about drinks – his favourite coffee is…his next one but only has one or two a day and he loves root beer!
When he is with his family and he is being creative is when life is the greatest for Steve. A perfect day on the Central Coast would be spent with his gorgeous wife Karen, perhaps watching a few episodes of his all-time favourite Star Tek Discovery and saying hi to his pet yabbie! His name is Rex – he is about 30cm long, 4 years old and keeps growing out of his tanks so Steve keeps buying him new ones!
The team at Mingara have warmly welcomed Steve to the Indigo – Eats, Treats & Bar family. Check out the new menu today. “I’m excited to deliver the fresh new concept for the customers and our great team!”
