In Hadley’s, at Mingara, the kitchen is more than just a place where meals are prepared – it’s where passion, experience, and creativity come together under the leadership of Head Chef Peter Streckfuss.

With nearly 25 years in the industry, Peter’s journey began early. Starting his apprenticeship at just 16, he quickly discovered that the kitchen was where he belonged, and he never looked back. Since then, his career has taken him through many diverse culinary environments, including fine dining restaurants, pubs, cafes and even running his own business. This depth of experience now shapes the quality and consistency guests can expect at Hadley’s today.

Inspired by family and flavour

For Peter, cooking has always been deeply personal. His earliest inspiration came from his father, a Senior Lecturer in Hospitality and Tourism, who brought creativity and global influences into the home kitchen.

“Dad was always travelling and bringing back new ideas and dishes,” Peter recalls and these early experiences left a lasting impression.

His father’s signature chilli sauce, a staple at many childhood meals, now features on the menu at Hadley’s, as a small but meaningful tribute that connects past and present.

All across the globe

Peter’s passion for food has taken him all over the world. Over three and a half years, he travelled extensively, immersing himself in new cultures and cuisines. Italy, in particular, left a lasting mark, inspiring his love for cooking pasta which is still one of his favourite things to create.

But his travels weren’t just about food. Alongside his partner, Peter worked with eco-tourism organisations, offering his skills in exchange for food and accommodation. These experiences led him to work in Canada, the Virgin Islands, Jamaica and beyond.

One of the most rewarding chapters of Peter’s journey came in Jamaica, where he worked in a homeless shelter. He taught residents there how to bake bread – a simple but powerful skill that made a meaningful impact.

The ‘first bite’ philosophy

What continues to drive Peter today is something he calls “the first bite look”. It’s that moment when someone takes their first bite of a meal – their face and reaction speaks a thousand words and their true reaction to the dish is revealed.

“That reaction is what I love,” Peter says.

It’s a simple idea, but one that underpins everything that comes out of the kitchen at Hadley’s – it’s food that makes people feel something.

Leading with culture and creativity

Head Chef, Peter is passionate about more than just food, he’s equally committed to creating a positive and supportive kitchen culture.

Having worked under tough and sometimes aggressive leadership early in his career, he made a conscious decision to do things differently.

“I didn’t want to be that chef,” he says.

Instead, he focuses on fostering an environment where his team feels inspired, supported,and motivated to grow. By mentoring young chefs and encouraging creativity, he’s helping shape the next generation of talent.

For Peter, a happy kitchen isn’t just good for staff – it directly impacts the food. When a team works well together and enjoys what they do, it shows on every plate.

Elevating the classics

Peter’s approach to the menu at Hadley’s is simple but effective, it’s about listening to the members and delivering what they love – just better.

From classic pub favourites like schnitzels, burgers and pizzas, he focuses on refining and elevating dishes without losing what makes them special.

It’s about striking the perfect balance – respecting tradition while delivering quality and consistency at the highest level.

A vision for Hadley’s

Looking ahead, Peter has a clear goal to make Hadley’s one of the best casual dining destinations on the Central Coast.

“With the facilities we have here, I really believe we can make this the place to go,” he says.

With his experience, passion, and leadership at the helm, that vision is already well underway – one dish, and one memorable first bite, at a time.
